What ingredients are in a good double acting leavening agent and what percentage of each ingredient is needed for a layer cake recipe?

Double-acting baking powders contain both fast- and slow-acting acids. You would have to get the ingredients from a chemical supply house. Note: cream of tartar as an ingredient has not been included for decades.

As for the formulation, I don't think that there is one available.

A homemade version of single acting baking powder

2 tablespoons cream of tartar
1 tablespoon baking soda
1 tablespoon cornstarch

Rumford Baking Powder Ingredients: Monocalcium Phosphate, Sodium Bicarbonate (Baking Soda), Food-Grade Cornstarch (Non-GMO "not genetically modified")

Rumford Baking Powder Ingredients include both Monocalcium phosphate (calcium acid phosphate) and anhydrous monocalcium phosphate [another form of monocalcium phosphate] which is treated as another acid. The presence of both these acids makes it a double-acting baking powder.

However can anyone provide a more clear formula for
a double acting leavening agent? I have a for a single agent
but I'm still looking for a double acting agent...

A double acting has an added or sometimes two acids such as monocalcium phosphate and sodium acid pyrophosphate or sodium aluminum phosphate; salt acids such as potassium bitartrate aka cream of tartar only offers a single rise. Adding the monocalcium phosphate might make it a double acting I just don't know how much would work icon_confused.gif Any advice icon_biggrin.gif
