I have not tried it yet but there is an egg-less vanilla cake recipe on this site that seems to have gotten good reviews.

Hi,

I have made a ton of eggless cakes. But have never stacked them.

I have a recipe here:

2 1/2 cups Cake flour
2 teaspoons baking powder
1 teaspoon baking soda
2 tbsp Superfine sugar
1 (14 ounce) can sweetened condensed milk
1 cup orange juice
1 tbsp vanilla extract
3/4 cup melted butter
2 tbsp White vinegar

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
Sift together the flour, baking powder and baking soda into a large bowl. In a large bowl, mix together the flour, baking powder, baking soda and Sugar. Make a well in the center and pour in the sweetened condensed milk, orange juice, vanilla and melted butter. Mix well and pour into prepared pan.
Bake in the preheated oven for 30 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

Here are some tips though:
-Make the cake in shorter layers. Like 1" or so.
-If you want to taste the orange in the cake i would suggest to add some zest too.
-I have made it with different types of Juices like Pineapple, Apple etc.

But remember all eggless cakes come out dense. But very moist.
I am sure there should be no problem stacking them.

We have made several multi-tier vegan cakes (egg-free and dairy-free) without any problems. Vegan cakes tend to be denser, but if you use a recipe that works well they taste just as good as non-vegan cakes.

I have never stacked it but the Wacky/Chocolate Depression cake is vegan and tastes good. I made it for a lactose intollerent friend the first time I made it and evenyone at the party enjoyed it and I have made it since for people who do eat eggs/dairy and no one knew it had neither.
