Help On Finding A Mango Cake And Frosting Recipe.

I am looking for a Mango cake recipe that uses mango in the actual cake and also has mango in the frosting. I have tasted a mango cake from Red Ribbon Bake shop and they are so delicious. Has anyone tried some of recipes from CC?
Mango cake
2 1/2 cups peeled and mashed ripe mangoes
2 cups sugar
2 eggs
2 cups all-purpose flour
2 teaspoons baking soda
1 cup chopped pecans or 1 cup walnuts
1 teaspoon vanilla extract
4 ounces cream cheese, softened
1/4 cup butter or 1/4 cup margarine, softened
2 1/4 cups sifted powdered sugar
1 teaspoon vanilla extract
Directions:
1In a mixing bowl, add the first 3 ingredients; stir to combine.
2Add in the flour, baking soda, pecans, and 1 teaspoon vanilla; stir to combine.
3Pour batter into a greased and floured 13x9 inch baking pan.
4Bake in a 350° oven for 35-40 minutes or until pick comes out clean; let cool.
5In another mixing bowl, combine the remaining ingredients; stir to mix well.
6Spread over the cake.
Here is a recipe. I just found it. I do not like Mangos personally speaking so would never try it for myself.
Mango Buttercream
1/2 cup butter, softened
1/2 cup mango puree
Zest and juice of 1 lime (well, in this case, I'll just sub 2 tbsp of OJ)
2 tablespoons honey (any mild-flavored honey will do)
4-5 cups of powdered sugar
In a mixing bowl, cream butter until light and fluffy. Add mango puree, zest and juice (or OJ) and honey. Mix well. Add powdered sugar, 1 cup at a time, until desired spreading consistency is reached.
It makes about 12-14 servings. I'm going to use orange juice as you've suggested and report back.
I will have to try this. We have a mango tree and hubby does not really like mangos. I am always giving them away to neighbors or throwing them away.
WOW!! I do not personally care for them by themselves, but my daddy loves them. He would think that was a crime. Are you in Florida? Maybe we will have to connect on the next harvest when ever that is here. I have to say that I think that my mom and dad would plan a vacation to FLorida or whereever you are to get mangos. LOL!! I like mangos mixed in with other fruit like pineapples and oranges and stuff. I am sure you probably don't like throwing them away either.
Last year when my husband and I bought a home, we discovered that it had a pear tree on it. Well, I watched and watched the fruit and kept going out and checking on the ripeness because I did not want to waste any of them if it could be helped. There had been pears that dropped off and I am still trying to figure out what was going on. Finally had some neighbors stop by and ask if I was going to use them. I said I have been trying to figure things out because they aren't getting ripe. SO then I got an education about my pears. Then I went out to pick some for myself and of course allowed them all to pick because they had all been informative and there was no way that we could use all of them. This year I just didn't have time to deal with them so I let the one lady have them all. I still have some frozen frozen from last year.. maybe next year I will be in a better position to use some of them. . Let me know if you try it how it came out. Best Wishes
My mom would think it was a sacrilige to waste mangos, She would have the driver stop every time she saw one on the street last time we went to Puerto Rico. I might try tgis recipe also without the nuts

Are you serious??? Throw them up to me!!! I love mango puree in smoothies.

You are welcome Bobwonderbuns: Like I told her, I haven't tried it, but might do so soon as my dad and mom are coming for a visit and I could make them a small cake to celebrate all the birthdays. Mom's was Sept. Dad's is November and my husbands is Oct. In my family(husband, kids, brother's family, and mom and dad I virtually have a birthday in every month, but 3 and if I count my husband's famiy, sis, mom and dad there are only 2 months without birthdays. There are a few repeats in our family. Unfortunately, I don't get to do birthday cakes for them as they all live out of state.
This doesn't fulfill your original question because the mango is only in the filling but for all those who love mangoes, I have made this (both in it's original form and as a double layered cake by making two) and it is really nice (and easy).

There are recipes using mangoes on macsmoms gourmet flavours thread. There are 3 cakes, coconut mango, jalapeño mango and mango chiffon cake. And there is a mango curd recipe. I have made the mango curd, it's great. I use it as a filling and I also add it to my Italian Meringue Buttercream to make mango buttercream. Ive made the passionfruit version and that is to die for!
