I am going to make my own cake board for a larger wedding cake in a couple of weeks and I was wondering if anyone had any hints of what to use cover it with. Can you use a piece of plywood cut to size and covered with wrapping paper? I will have a covered piece of cardboard under the cake so it wont actually be touching the cake? any advice will be greatly appreciated.

You could, but the wrapping paper would likely stain from icing grease or borders even though the cake is on its own board... you'd also need to cover the wrapping paper with something clear and grease proof.
If you plan to reuse the plywood, I'd cover it with white Contact Paper to make the board's surface washable, then cover with your color choice of Wilton fanci foil to match each occasion.
I use 1/2" foam core. Sturdy!!!
I use it on my tiered cakes as well as single.
I wrap them in fancifoil
