My First 5 Layer Stacked Wedding Cake W/filling...help Me !!

Hi there everybody...pretty new here...but thought I would throw my questions out there....I have BRIDEZILLA on my hands...Love her to death, but WHEW...will be glad when this is over...she has decided that instead of a traditional 3 tier round with fountain, she would like 5 tier stacked square cake with a filling....I need a good recipe for the filling, she mentioned white chocolate filling...any ideas...I have never done a cake with filling, hints, suggestions??? She doesn't want fondant, so will be covered in BC, would also like to color cake batter to make it marbled...so...please lead me in the right direction and help me find a to die for filling recipe that will hold strong till they cut this beauty!! Thanks in advance for your help..it is def appreciated!!!

If she's dead set on white chocolate filling, you could do a white chocolate ganache or perhaps a white chocolate cheesecake filling...

Cakes are going to be white and chocolate...nothing out of the ordinary, Bride would like the white cakes to have the marbled look ...can I just add coloring to the batter??? Thanks for your time and help!!

to marble cake, reserve some of the batter (maybe 1/3) and add some cocoa powder or chocolate frosting(in the style of betty crocker box mix).

Then just swirl the darker coloured batter into your white cake with a wooden skewer or toothpick or something to just swirl it together (but not combine) thumbs_up.gif

Hehehe.... 3 tiered rounds w/fountain went out of style many, many years ago icon_smile.gif Sounds like she knows what she wants and it will be beautiful.

No problemicon_smile.gif Just bake your layers, and before putting two together put filling between them. Make a dam of thickened icing arund the edge to hold the filling in. Make that dam no thicker than 1/4". Filling can be anything from jam to fresh fruit to pudding mixed w/buttercream or not.

Yes, just add some coloring to a small part of the batter. Spoon about 1/2 dozen blobs of this colored batter into the pan on top of the plain batter and using a fork Pull it zigzag thru the batter from end to end, then side to side and STOP icon_smile.gif You don't want to mix it until it is muddied all together.

filling is WHATEVER is between the layers, so I'll bet you've done fillings many times. Filling is as much a *location* as a product.

Just curious, when you say she wants it marbled, are you saying she wants chocolate and vanilla marble or different shades of white marbled?

I looked at your photo's and you have a 5 tier square cake, the tiers look pretty tall, so it looks like you've filled cakes to me.
