How To Avoid Leaking Fillings.

I usually have this problem with my cakes. Leaking fillings.
So I line my cake with about 1" buttercream then I fill in with strawberry filling. I always cover my cake with buttercream, frig, then place my MMF. I usually keep my MMF as thin as I can get it but not too thin.
Any suggestions to how I can avoid the filling from leaking without having that 1/4" MMF thats usually required?

Have you tried different fillings? Maybe the strawberry filling is too thin. (just maybe) or try putting a thin layer of buttercream and then line the cake with icing. Try not to spred the filling out to much, the pressure of the fondant will spread the filling out on its own. If all else failes you might just have to make your fondant thicker :/ hth
Yeah I might have to try another because its only the strawberry that does this.

The buttercream dam that you use around the edge of your layers should be a nice, thick rim with stiff buttercream. Obviously, if the filling is super runny, it will leak no matter what, but if it's glaze consistency, you should be fine. HTH!
if you do not mind, I will share the recipe for strawberry (works just the same with raspberry!) filling! I ALWAYS start with a frozen, pre-packaged fruit because fresh is simply TOO juicy, and for me, has always resulted in a mess. I hope this helps you, but this filling is TO DIE FOR..and after testing many recipes, was the best and sturdiest recipe for cake decorating:

Sugarshacks dvd explains how to create a dam around the edges of your cake to prevent fillings from leaking. She puts extra conf sugar into some bc and then rolls tubes and builds a dam ....it works very well...you may want to get her dvd
