Hi Cakers!

I am in the market for a new KA mixer. I have a question regarding the 6-quart. I use Sharon Zambitos BC icing recipe. It is for the 5-quart mixer. I am aware of the 6-quart recipe that is out there, my question is not that.

If I still use the 5 qt. Recipe in the 6 qt. Mixer, would the icing still be airless? I am thinking that since it is a larger bowl the paddle should go down in the icing more.

Please forgive the stupidity in this question, but I have to ask it.

Thoughts???

I have the 6 qt KA and the paddle does not go down into the bowl as far as it does in the 4 qt. Whenever I make frosting in it I have to scrape the bottom by hand and then keep mixing. I stick with my 4 qt for making my buttercreams. Hope that helps.

I have the 6qt KA, and I am about to buy a beater blade for it! It has rubber sides so no more bowl scraping! I have one for my 4.5 qt ka and LOVE IT! And, I use SZ recipe as well, you need the 6qt recipe. There is one listed here on CC in the recipes, but its not enough! I emailed her and asked her for her 6qt recipe, and she was very sweet and emailed it back to me icon_biggrin.gif HTH!!

I have a 6 qt and I use 2 lbs of butter, 4 cups sweetex, about a cup of milk, and about 8 lbs of powdered sugar. It fills it up to the very tippie top and I have to use my pouring shield to keep it all in.

Definitely invest the $24 for the beater blade. It works really well. I have both a KA and a Cuisinart and have a beater blade for both. Wouldn't be without one now. It isn't perfect, but it's alot better than the standard blade, especially for the bottom of the bowl.

I like the beater blade for cake batter but not for icing...pulls air down into the icing. I keep breaking my blades though. Only have one left!

I've never had a problem with excessive air in my buttercream with the beater blade and I've only ever had one of the blades break, but it was on my Cuisinart, not the KA. It had a 1-year warranty, though, and I got it replaced at no cost to me. Unfortunately, before I realized it had a warranty on it (I had thrown away the packaging it came in that had the warranty on it), I had already purchased a new one, so now I have an extra. And, needless to say, I kept the new packaging with the warranty and put the date it was purchased on it. Hopefully I won't need the extra one for a very long time.
