To the buttercream experts!!
If i did the cake attached (three tier) could this be put into the hotels fridge and when brought down to room temp would the shape of the piped roses stay in tact???

If you don't have fillings that require being refrridgerated then I would just make sure the cake was in an air conditioned area. No need to put in the cooler. If there is excessive heat and you have it in the cooler your going to get wet condensation on the cake and it will take a a while to dry and if you have any colors on the cake then you have the problem that they will run. I had that happen last year to a wedding cake. they put it in the fridge after I delivered it and then put it in the "barn" where the reception was with a fan on it. The writing they had on the cake in read was to read till death do us part.. well it looked like the death already occured.. just running down the front of the cake. Not my fault... it would have been fine just in there house until the recepton. it would have held up better in the heat just being at room temp.
The roses I assume are butter cream? if they are "set" and not just fresh made they should be fine ... if kept cool. I don't often use frosting flowers but I use royal icing if I have the choice.
