Isomalt is the sugar crystals you use, no sugar necessary. You can find them at your supply shop or online at countrykitchensa.com. They carry the clear isomalt in 1 or 5 lb. bags. You just melt the crystals, add water as per the directions and heat to the required temperature. The isomalt stays clear, it doesn't turn the amber color as regular sugar does. They also carry isomalt in stick form, those you just melt down on the stove or microwave as you would chocolate, then use. No cooking necessary, you can also remelt the remainder you have left over at another time so there's no waste. The sticks come in clear, red, blue, yellow, green and orange. They're a little pricey but much easier. I've used it both ways, won't go back to regular sugar.
