I love making cupcakes.
This week I tried a couple of firsts...for me. I wanted to make a mint chocolate cupcake...so...I started by making dark chocolate ganache for the first time...it turned out great! Then I melted some milk chocolate with crisco, poured it in a loaf pan and put it in the fridge for later. I then made some chocolate cupcakes that turned out perfect. Finally I made some buttercream icing, flavored them with mint, and tinted them the perfect shade of mint green.
When everything was cooled and ready, I filled the cupcakes with ganache, put a nice green swirl of mint icing on top, and then sprinkled a few milk chocolate curls on top.
The perfect cupcake! And they tasted like a little piece of heaven.

If you can't tell...I'm am so pleased with how these turned out. Usually something goes wrong and I chalk it up as a learning experience. Everything went right this time!!!!! Yay me!!

This is just indydebi's buttercream. I think I put 1 or 2 tablespoons of vanilla flavoring and just a touch of mint flavoring. Mint can be so overpowering, so I started with a little bloop and then added another little bloop after tasting. Not very scientific, but I was just going by taste. HTH

2 questions What is indydebi's butter-cream...and do you have a good recipe for chocolate cupcakes? My daughter is getting married in a month Oct 1 and I am looking for some cupcake recipe's I need to make 250 cupcakes ...oh I'm a good daddy LOL. I have one Mandarin Orange recipe that looks great but this chocolate one with mint looks really good too. Please if you can help me with that butter-cream and a chocolate recipe I would be grateful.

Yummy! Made me crave those little chocolate mint candies you get at Olive Garden! Does the WASC make good cupcakes? I'm looking for a good chocolate and yellow doctored mix for cupcakes, but the WASC has gotten mixed reviews.
