Whipped Cream That Holds Shape For Basketweave/roses?

Is there such a thing?

My friend (who is a pain in my rear end but I LOVE DEARLY) wants a cake for her grandmothers 80th birthday with basketweave on the sides and the iambaker roses on top, but after pulling teeth, guessing, reading between the lines and 20 back and forths, I have discovered that she doesn't like buttercream, she likes frosting (SAME THING HONEY!!!) How about whipped cream, can you do the flowers in whipped cream? I don't know, I will ask my cake guru friends and see what they say.

So...

Is there a recipe for whipped cream (NOT BUTTERCREAM WITH BUTTER OR SHORTENING) that will hold it's shape when making a basketweave and the iambaker rose swirls? Can I just add meringue powder until it's firm or will it turn into royal and get hard?

If you can get access to Rich's Bettercreme it will allow you do decorate with it. I normally get it in the frozen semi liquid form and whip it up. It is now regular whipped cream but a non dairy product and I have made roses out ouf it and I'm sure you should be able to do a basket weave. It doubles in volume and normally I buy it by the quart and it does not take but a short time to whip. If you get it too stiff you can just add a little more mic to it and just whip for a second or so, just to get it mixed together. Good luck using it.

I know this may sound like a travesty to some...but I don't make my own frosting. I do use the canned (betty/duncan/etc but not store brand) whipped cream frosting vanilla. Its tasty, family loves it, you can color it and I've used it to make the roses cake (several in my gallery). It might not hold as well for the basketweave, but I've used it for that too, sometimes more successfully than others. (try the regular creamy frosting in a can). When people like the canned frosting, why not use it! Good luck!

yes there is something that I use all the time because my family does not like buttercream at all. it's call frosting pride but I can't put a picture here. and it works so nice for the basketwave. this product is none dairy and if you can find bettercream it will help you too. good luck icon_smile.gif

I made a flag cake for the 4th of July and I added some piping gel to real whipped cream to stabilize it. I piped using a large star tip and it held the shape. You could always try the basket weave this way and make your flowers out of royal icing so they can be removed.

Not sure if this is what you are looking for, but I mix a tub of Cool Whip with 4 squares of Baker's chocolate and I was able to make roses with it. I don't know how it would do with basket weave. You may be able to add more chocolate for more stiffness and you may be able to use white chocolate and add color gels for desired colors.

I made the rose cake with whipped cream--nothing added to it. I decorated it before we went to my sister's to celebrate my Dad's birthday (Dad doesn't care what his cake looks like as long as it has whipped cream and strawberries; plus I had really wanted to try this cake icon_redface.gif ). The whipped cream held its shape until we cut the cake (about six hours later) and even the next day. Everyone, including Dad, loved how the cake looked.

I have the book The Cake Bible and in it she has instructions for stabilizing Whipped Cream by adding a few teaspoons of unflavored gelatin. You dissolve it in a little bit of hot water and bring it to room temperature and pour it into the mixer when you whip the cream. She says you can use it for pipping roses as well.
