Quick question-has anyone ever frozen a cake filled and frosted with ganache? I have a cake to do for my granddaughter's birthday and only have the morning of the party to decorate. I would like to cover it with fondant just after I take it out of the freezer. I didn't know if ganache took well to being frozen. Thank you in advance for any advice!

Appartently it freezes very well, and to defrost, take it out of the freezer and let it sit in the fridge until its the temp you need it to be.
The cake inside should be ok frozen too, I'd say you'd need to take it out a couple of hours before you need to work on it, to make sure its defrosted well.

Thank you-My goal though was to fill, stack the layers, and frost with ganache before freezing. Then when I take it out I would just have to fondant it. I have frozen ganache, but not at this stage.
So if it has been in the freezer do we need to thaw it out before adding fondant or can fondant be applied to the cake right out of the freezer.
Same as any other type of icing, you may have problems with sweating. Do whatever you are usually comfortable with, the ganache won't be any different.
Is it ok to use ganache on a partially frozen and filled cake? I have heard of cakes releasing gases as they thawed if you put fondant on frozen cakes causing bubbles or blow outs. I want to put ganache on my partially frozen cake, let it set (how long is best??) and then cover in fondant. Thank you!
