I recently heard about making red velvet cake with beets. I was wondering if anyone has tried this and if so what did you think? Also if you were happy with the results would you mind sharing your recipe? TIA

I don't have a recipe myself, but I remember reading in Cook's Illustrated when they were testing Red Velvet cakes that when using beets for the color in place of the red food color the cake was a strange pink instead of red. And the flavor was weird.
