Why does my isomalt bubble sugar always have silpat marks

Hi all,

So, I have a question. I am making bubble sugar with isomalt by sandwiching in-between two silpats, baking it, and then letting it cool. But, no matter what I do it insists on having the weave pattern from the silpat. I am using the none patterned side of the silpat - but - it doesn't matter. I have other bubble sugar domes I made using silicon molds and they come out clear (except for the bubbles)... Any thoughts?

I honestly have no idea how to help you with this, but I can't resist asking...

What exactly are you trying to do? I was trying to picture what you were doing and just can't. I'm really interested in trying some new things with sugar, so if you have time to explain, I'd love to hear it.

You don't sandwich it between the silpats. You just need to leave it on top of one mat and you should be good to go.
