Need Good Mocha Cake Recipe And Fillings For Wedding Cake

I'm making my first real (as opposed to dummy) wedding cake for my son's wedding next summer. While I have lots of time to experiment, I need a good mocha cake recipe that is strong enough to stand up to fondant and decoration. Also some suggestions for fillings. This cake is going to be served as dessert so I need it to be very special. Also how big do I have to make it for 125 servings?

I'd appreciate any help anyone can offer.

I'd say check out these recipes. MacsMom has a great list, and all of the WASC recipes taste wonderful, are easy to work with, and hold up great for wedding cakes.

As for the size, according to Wilton's servings guide, if you make a 6, 8, 10, 12 round, that serves 118, and a 7, 9, 11, 13 will serve 143. Both of these do not include serving the top tier.

And for the Moca cake, I'd use the chocolate WASC and replace any liquid with coffee.

I only use WASC for wedding cakes. Lots of yummy variations!

Thanks for the idea, but I will have to go through the recipes and find one without cake mixes or nuts (almond extract) that I can make into mocha. This needs to be a scratch cake due to allergies in the family.

hi carol - there was a scratch WASC recipe in here with lots of variations...http://cakecentral.com/cake-decorating-ftopic-654467-345-days0-orderasc-.html. i use this and adjust according to the flavour im after, so replace half the milk with strong coffee, and use coffee extract/flavouring instead of almond etc. if you're after chocolaty filling, try chocolate ganache, you can whip it for a fluffier filling or use as more of a truffle like filling. mmm, im imagining a mocha cake and white chocolate ganache filling, yumm.

Just because someone uses, or recommends, a WASC cake variation doesn't mean the cake has Almond in it. WASC is more of a general recipe. It basically means I take a cake mix, add milk, sour cream, pudding of my choice, eggs, oil and flavoring of my choice. But it is easier to say WASC then my above sentence.

I use a WASC variation for my mocha cake too. I use a yellow cake mix for my base, add milk, sour cream, eggs and oil (according to recipe) and instead of pudding I add 1 cup of mocha cappachino powder mix and no additional flavoring.

As for filling, I make a chocolate buttercream and add crushed toffee pieces to it (you can buy them already crushed in the baking isle by the chocolate chips). I have had several brides choose my cream cheese filling or chocolate ganache.
