Opinions Please: Wedding Cake Tiers - What Size?

I am making my friend's wedding cake and haven't exactly decided on the size of the tiers yet.

She asked for buttercream frosting and fondant drapes from tier to tier, adorned by fresh flowers. The base of her cake topper is 4" across. She requested 105 servings, but I think I will make it bigger to get the right proportions.

What sizes do you suggest? (The pic she gave me is 4 tiers.)

How about a 14" x 10" (for 116 servings) x 6" (to freeze for 1st anniversary)? A four-tier cake will be too many servings.

If her heart is set on a 4 tier, you could do a 6,8,10,12

I have a 6 serving 10,
8 serving 20,
10 serving 35
12 serving 52
for a total of..... 117 which is fairly close.

I use Wilton chart but round down a couple of servings to allow for the cake lost from my support system so my numbers may not match yours exactly.

Or you could make the 6" a dummy or save it for the first
anniversary which would give you 107 servings approx.

I love Earlene's cake serving chart for figuring out this kind of problem.

She says a three layer (14" - 10" - 6") is 105 servings.

She shows a 115 serving option that is 14 - 11 - 8 - 5.

These options would give the bride a couple of things to consider and choose from.....

Thanks for the responses. I use Earlene's chart as well... I'm still struggling though because I can't get odd sized pans for a hundred miles! They only sell Wilton in this small town. icon_sad.gif

When is the wedding for? You can order the odd sized pan on-line. Cakestyles tier suggestions sound good otherwise.

Is this a gift or are you charging her?

It sounds like a gift. If that's the case, don't sweat the servings and go a little bigger - 16,12,8, 4-topper that they keep. You'll spend a lot of extra time and money and shipping charges getting the "exact right size".

If you are charging her, present her with the options that work, let her decide, and charge accordingly.
