¡Hola, EL GORDO! A ver si alguna de estas sugerencias te sirven. Primero, el pastel necesita tiempo para consolidarse después de la horneada. Yo normalmente congelo mis capas de un día para otro, porque encuentro que ayuda en este proceso (aunque no todo el mundo está de acuerdo con la congelada, pero dejarlos donde sea de un día para otro es bueno). Luego, el pastel necesita ayuda para sacar algunos gases productos de la horneada. Después de rellenarlo y poner la segunda capa, le pongo un peso encima por algunas horas - un plato grande o un mosaico de piso que tengo sólo para eso. También la superficie del pastel tiene que estar totalmente libre de imperfecciones, porque éstas solamente se acentúan con el fondant. Relleno cualquier huequito que queda con una mezcla de pastel desmoronado y betún (¡"mortero pastelero"!) y recorto y emparejo cualquier cosa que sobresale. Por último, uso la capa más delgada posible de betún o ganache debajo del fondant. Ojalá alguna de estas cosas te ayude a evitar esos chicones.

Tambien yo lo refrigero, no los congelo..los hago un dia, los meto al refrigerador, sin rellenar solo para que se asiente bien el pan...al dia siguiente los relleno, primero claro recorto las imperfecciones del pan, y asi como mariana, hago una pasta con el butercream y las migas del pan para que quede perfectamente liso, y les paso una capa delgada de butercream, y vuelvo a regrigerar, al dia siguiente los cubro con el fondant.
