Don't Gum Paste Flowers Pull Off The Sides Of The Cake???

Question... don't gum paste flowers (when put on the side of a cake), when using lots of them, pull off the side of the cake? I've only ever made a fake wedding cake with gum paste flowers cascading down the sides because I was afraid to do it as real cake. Ron Ben-Isreal and others always make beautiful cakes with cascading gum paste flowers so I know it can be done.. but HOW does it not pull off the cake because of the weight?

I have done many cascading flower cakes. I build from the bottom up with the larger flowers and the stems are long enough(about 3") that they have plenty of structure. then fill in with the filler flowers. Also, my flowers are thin, so not that heavy. My wires are coated in white chocolate (no, it doesn't break or peel off) and that adds support inside the cake.

Forgot to add, I place the flowers on at the venue after the cake is set up...

Do you start at the bottom so that the flowers kind of support one another (they don't pull down because there is another one below it)?

Great idea to coat wires with white chocolate.

Yes I build from the bottom up, with the larger flowers first.

I don't know, I only know how I have done it I have several cake in my photos that I did this way.

I do that too, but I sometimes use toothpicks instead of wires.
