I'm Having Problems With My Mmf

Hello I'm having problems with my fondant. Lately TX is have a lot of humid and is very hot, I have a cooling system not an a/c yet. Once I cover my cake with fondant it starts melting I have added up sugar until it doesnt stick on my fingers but that dont work. I have tried corn starch and nothing. I have 2 cakes for this weekend and don't know what else to do. Do I need to know, anything else that can help the fondant on this humidity? Please let me know! thank you.

Maybe place a fan near where you are rolling out the fondant to keep the air moving?? Don't know if that will work, since I am blessed to have a/c, but it might be worth a try. Hopefully, someone else will chime in soon with a suggestion. Good luck!

Try cutting back on the liquid when melting the marshmallows and make sure to add the shortening. Allow it to rest once made is a must. I live in Fla. humid and hot but do have a/c. Good Luck

Are you putting your cakes in the fridge before putting on the fondant. If there is alot of humidity where you live then that may not be a good idea.

From hot humid FL here, too. What are you using under the fondant? This summer, any cake I have made using frosting with ANY amount of butter in it has caused my MMF to sag.

As mentioned in the above post, I have cut out all of the liquid and used sugar only, with a little bit of shortening. Then I let it rest overnight. For this brutal summer heat/humidity, I am only using a very thin layer of Indydebi's buttercream, or a very firm ganache under the MMF. No sagging problems with those changes. =) Hope this helps.

Thank you very much for all of your advice. I stop putting my cake in the fridge and Im using the fan it help a little but Im still having problem with the MMF I think Im doing something wrong or it come out to dry or too sticky. Rrrrr Thank girls for everything.
