i tried 2 times this week to make sugarshack's buttercream recipe in my kitchenaid professional 5 quart mixer. It is the bowl style that is shorter and fatter. Both times it would not create the vacuum, therefore was full of air bubbles. I went to my mom's house and used her 4.5 qt which is the tall skinny bowl and it worked perfectly..no air!!! so great!! BUT i am wondering if anyone had the pro 5 mixer adn has figured out a way to make this amazing recipe work??? I used 5.5 cups of Sweetex 5 lbs of domino sugar, 4 T of flavor and 10 T of HOT creamer liquid mix. THe bowl was full and the paddle was completely submerged. Any ideas?? Thanks so much!

I have the pro 5 plus too and I finally made it work last week. It was perfect! I used 6 heaping cups of sweetex, 6 lbs of powdered sugar, 5 tablespoons of flavor, and a cup and a half of the creamer mixture.

I didn't do it exactly the way she does it on the video though. I started the same, mixing the shortening and liquids first, but then I added the powdered sugar by the pound. Between each pound of sugar, I scraped the sides of the bowl and pushed the mixture down. It's hard to scrape that bowl while it's running!

Once all the ingredients were added, I turned it up to speed 1 for a minute, then speed 3 for a few minutes.
Hope this helps!
