How long MMF fondant lasts in fridge? I made a batch ( over 6 lbs) 2 months ago for a cake but I didn't make the cake and so didn't use the mmf and it has been sitting in the fridge since. Can I still use it ? or should I make another batch. I wrapped it tightly with saran and put it in a plastic container.

It's primarily sugar so it's probably fine. We had a chef at the bakery I worked for say something several years ago that I also was surprised to read in a magazine a couple of weeks ago...'if it smells good and it tastes good...it probably is good.'

I had some MMF in the refrigerator for 4 months one time and it still tasted good but was a bit grainy. I was told by some lovely people on here that if you add some glucose to the MMF when it is grainy and kneed it in that it soon smooths right back out again. It worked like a charm!
