I am making a wedding cake for a dear friend who's having an outdoor wedding. Of course we've been having record breaking heat and humidity and now I'm stressing! Is there anything I need to add or change to help stabilize the frosting as a precaution? Any tips would be greatly appreciated. Thanks so much!

I use only Sugarshack buttercream, live in SE Louisiana, and wouldn't change a thing for an outdoor wedding. I would change my procedure a little, not the recipe.

I would deliver the cake at the last moment possible, while insuring I'll have plenty of time for set-up or any minor repairs. I'd also ask the planner/bride or groom about making sure it's not in direct sunlight (or if it is, that it doesn't sit there for long). Also, I'd have that cake as cold as possible for delivery. Ask about cutting/serving the cake early in the reception, not at the tail end.

Is it possible for you to switch your design plan and use fondant? It really is much more stable in the heat.

Just a little mention: the icing in that BW video is made with butter. If you use the all shortening version of mine, the melting point is much much higher. It will be stable at high temps for a good while, but I would of course avoid direct sunlight. But any cake out in the heat is prone to blow outs.....

PS. I would rather poke my eyeballs out that have an outdoor wedding in the summer, LOL

ahhhh! I have a wedding to do in Oct! I just recently switched to Sugarshack's BC for the smoothness... But it STAYS HOT down here! Sugarshack, if you are still on here, the avg says 86 for Oct...and they plan to have this cake outside, in the open, no tents....and the wedding takes place in the same spot as the reception!!! They want this cake on display the whole time! Omg I am freaking out now after watching that video, should I tell her to do something different!? Did I mention I will be a guest at this wedding where NO ONE knows me, or that I am the cake decorator?? Oh no, getting scared!

my version does not have butter so it is not going to melt at 86 degrees. it will sweat, it might blow out, but it will not melt like in that video with the butter buttercream. With no tents or shade for it? In direct sunlight? I do not know what will happen there; as I have never done that, LOL

Maybe they can put up a small tent just for the cake. We have a 10' x 10' pop-up. It has a white top with aluminum legs. They can cover the legs with ribbon or something. It is much lighter than the one with steel legs. We got ours on sale at Pep Boys.

Ugh I am nervous now! Is it my place to tell her "hey, Don't think that is a good idea, rent a tent!"????

Renting a tent might be more expensive, but I really have no idea what they rent for. We paid less than $100.00 for it.
