can you refrigerate fondant that is aon a cake?

Yes, you can refrigerate fondant cakes. But, when you pull it out of the fridge, it'll go from cold to room temp and it will most likely "sweat". Condensation will form on the outside and the cake will look shiney. So I recommend that if you want present the cake without the shiney look, take it out of the fridge a few hours before you deliver so it has time to evaporate icon_smile.gif
