Hi Guys! How do you do the mound (slope) at the bottom part of lambeth cakes? Thanks! icon_biggrin.gif

You can do it using two cake drums and some royal icing. Take a cake drum that is 4 inches smaller than another cake drum (for example, a 12" on top of a 16") and hot glue or royal icing the drums together, with the smaller of the two on top. Then, using royal icing, build up the icing between the gaps in the boards and smooth on an angle with a bench scraper. Let is dry for several days, then sand it down with fine grit sandpaper. You can then cover with fondant.

I'm taking the Lambeth and Australian Method class in two weeks at Wilton. I can't wait to learn about all of this.

The bevel can range from 1 1/2" to 2", are you wanting to do it out of cake? For a 16" bevel with a 12" cake on top, I take a 16" x 2" cake, place a 12" cake board centered on top and a 16" cake board on bottom, then cut with my knife laying against both boards. It gives me the correct angle and slant every time.

I took Kathleen Lange's Lambeth Boot Camp last month and loved it!! frankiekie you can also use cereal treats, we had several people in class that did so. You can also buy the base pre-cut from a place in CT. Ping me if you want info. Good luck and have fun!
