Red Velvet cake does have some chocolate in it. Could this be why it turned brown?

Were you able to look inside the cake itself to see if it's a little bit red?
When I make red velvet cake, It's inside color is similar to a dark brick red, not a vibrant ruby red.

I hope that helps.

is it a box mix or from scratch?
from scratch does resemble more of a brown-ish red. a box mix is more brick red.
it also depends on how much cocoa and red food coloring you put in

What food coloring did you use? I have done just 1 bottle of the mccormick food coloring because most don't like the idea of eating so much red dye. I have done the Wilton no taste red and it give a brown/reddish color which is fine for me.

You might want to try two bottles of the mccormick if you have time to make another batch. Or a bottle and half.

Thanks for the reply TOKAZODO,AUNDREA & TEGE-CAKES...
I made a other batch (sracth) with a bit more food coloring and only 1tsp coco. It came out better that time. Everyone loved it! Yummyyy icon_smile.gifthumbs_up.gif
