Help! Isomalt Is Cloudy- How Can I Fit It?

Hi,

I made coral out of isomalt two days ago using the "pouring it over ice" method and it turned out beautifully! However, when I came home from work tonight, my lovely clear coral is now completely cloudy- any thoughts on how this happened and how I can fix it? Any help would be SO SO SO appreciated. Thanks!

was it around moisture? I've noticed that over time my isomalt clouds because of moisture but it usually takes a few weeks. hth

it was fairly humid today, but I left the AC running- but that seemed to be my guess. I have one more package of isomalt, but alas, my hubby broke my candy thermometer yesterday while doing dishes, and I am not able to go out and get another yet tonight... I guess it's back to the drawing board tomorrow. icon_sad.gif (of course with the AC cranked so high I'll need to wear a parka while decorating this baby!) Thanks for the reply
