My sister inlaw and I are makeing a cake for my inlaws 20th anniversary. We are doing a teacup shaped 2 tier topsy turvy cake. As we put the 2nd tier on it didnt fit in the space we had cut in the bottom tier and we had left it out of the fridge too long decorating it and it started to collapse. Only the top tier though! the bottim tier is as sturdy as can be. We put it in the fridge for the night and are going to start again in the morning but unfortunately the party is tomorrow so we dont have time to make a new one. We have to fix the one we've got. To top it all off the entire cake is done in WHITE fondant which then got cake and buttercream all over it as the cake started to pretty much melt everywhere. Any ideas on how to fix the cake and clean up the white fondant?

Oh my... I am sorry you are having trouble.

Take the smaller tier nd take off the fondant and scrape off the BC. Cut the circumfence of the tier until it fits with on the larger tier with quite a bit of space to spare. You have to calculate that all that BC and fondant will need space too. Ice the smaller tier in BC again and make sure that none of the filling is leaking out. That might be the reason why your fondant has started to melt. Chill it well (or put it in the freezer for about 30-45 minutes) then cover with fondant. Do not put back in fridge but let it come back to room temperature slowly. It might "sweat" a bit (depending on how hot and humid it is where you are), just let it dry by itself (maybe in fron of a ventilator) und do not touch it. Just stack ist shortly before the cake is served.
