Cake Crumb Coated And In Freezer... What Now?

Hi all,

I assembled a flag cake, buttercream icing between the layers, crumb coated in in buttercream as well. It's been in the freezer overnight now.

I need to finish a buttercream icing cover and then I want to cover it in fondant.

My question is ... how long shall I leave it out of the freezer before doing either of those things?

Can I start while it's still totally frozen?

Thanks for any advice.

I think you should wait till the cake is closer to room temp before applying another coat of buttercream to the cake. Because the buttercream will harden on the frozen cake and it would be difficult to get the buttercream completely smooth.

Let your cake thaw slightly, then do your final coat of buttercream. After this, let it settle for a few hours at room temperature (unless you have perishable fillings, then put it in the fridge). After that put your fondant on it. It's important to let it settle to prevent bulging under your fondant. If I have time I let my cakes settle overnight.
