Bubbles While Rolling Fondant-Why?

Hi Guys-
I was rolling out my fondant on the Ateco silicone mat- rubbed down with shortening and I was getting air pockets as I was rolling it out- I'm sure that helped to wreak havoc on my cake- Why is this happening and how can I prevent it?
Thanks for any advice- I have 2 more cakes for this weekend- (for friends and family-but I would still like them to look as smooth as possible)

Could be the way you are kneading it. If you knead it like you would knead bread it will get bubbles in it. I was taught to roll it out like a snake, folding it in half and twisting it like a rope with the ends together, repeating this over and over till it is smooth and elastic. No bubbles. Hope this helps.
