Truffle Frostings?

hi everyone!
Just wondering if anyone have a good recipe of chocolate truffles frosting?
I'll be baking chocolate cake with that frosting ( mother's request!). Pls. Help!

I think you want a whipped chocolate ganache.

Try two cups heavy cream, heated but not boiling. Pour over 8 ounces of milk or dark chocolate. Let sit for a few minutes, then stir untill all of the chocolate is combined. It should look like hot fudge. Let cool and then whip into a frosting consistency.

It is delicious and very chocolatey and has that truffle mouth feel.

Hi.

I'd go with a chocolate ganache being as though the ingredients are the essentially the same as a chocolate truffle.

I use 2 recipes. One is a 3:1, chocolate: heavy cream recipe. Take 8 ounces of heavy cream and heat SLOWLY to just before it starts boiling. While the cream is heating, chop 24 oz of chocolate (I use dark with 60-70% cocoa). Pour the heated cream through a sieve over the chocolate and allow it to sit for a few minutes. Whisk until smooth. Allow to set at room temp until desired consistency is reached.

This recipe works well for me. HTH icon_smile.gif
