Hi all,
I've been storing cakes with buttercream and fondant in the cupboard usually only over night, but I dont feel that this is safe being that butter is a dairy item which should be kept in the fridge?
How do you store each different type of filled cakes (ganache, buttercream, cream cheese etc) which are covered in fondant? How are they each stored safely to comply with food safe regulations?

Cakes covered in butter cream/ganache can be kept out. i have kept it for more than 3 days and nothing has happened. i think the sugar in the icing preserves it. As for cakes that have a cream cheese filling, that you will have to place it in the fridge. Not sure what happens to the fondant though
Butter does not need to be refrigerated. Just as LaurenLuLu said, I leave butter out on the counter continually so it is soft when I use it and it is safe to eat. The sugar in the icing keeps the icing safe under the fondant. Fondant doesn't do well in the fridge because of condensation but if you have a fruit filling or whipped cream based filling it needs to be in the fridge. So if you have to put the cake in the fridge just don't touch it when you take it out of the fridge and the condensation will evaporate.
Southerners leave butter on the counter for a week or more and it's still good
lol, being a southerner myself that statement made me laugh in my south butter melts after being on the counter a few hours, its just way to hot in texas!
