I don't normally refrigerate my cakes that are covered in fondant but I did last night because it was ridiculously hot and the cake had a fruit filling. I now have a cake that is beyond wet. I touched the fondant on the board and it is almost gooey. The cake is being picked up in about 3 hours, I currently have it sitting out with a fan on it hoping that it will dry. Is there anything else that I can do? Or will this work?
That will dry it...it just needs to evaporated, but don't touch it anymore. It'll leave marks!

Next time this is an issue, box the room temp cake, wrap the box up well in saran several times, place in fridge. Remove from fridge a few hours before pickup/serving, keeping on all of the saran.
Unwrap--now that the cake is at room temp--and came to room temp while still wrapped--no condensation (unless is rainy or super humid and then all bets are off--everything will have condensation on it under those conditions).
