I have a wedding cake due for tomorrow. I have done a few wedding cakes over the years, but this is my first cake not to be covered in fondant. So last night I took my 3 tiers out of the freezer, filled and crumb coated and left them out in the basement rec room overnight to settle. It is cool down there and relatively humid in the rest of the house, however I have been keeping the air conditioner on high today.

My issue: This afternoon I went to check on the cake and the 14" tier has consensation all over the top and icing is all wet. The 6" is sticky on top, the 10" tier is better.

What should be my next step? I plan to do the finish coats tonight. Should place the cakes in the fridge and then take them out just before icing? With all my other cakes, I have put iced cakes into the fridge and covered in fondant the next day. But because I was more worried about bulging/settling with buttercream only cakes, I wanted to see what would happen if I left the cakes out.

Any advice appreciated.

Do you have a fan you can direct onto the cakes to dry them off?

I do have a fan. I just brought it out and set it up. And I will give that a try. Thanks.
Should I still worry about putting the cakes into the fridge to harder the icing?

I refrigerate all my cakes, especially buttercream ones because I like working on them while the icing is hard. I don't think you should worry about it.
