I dont know what to do. I've tried 5 different recipes from scratch and they have all come out either with no flavor, dry like cornbread, so heavy you cant eat it, or crunchy! What am I doing wrong? I just want a basic cake that is moist and fluffy! And I can also use for cupcakes.
If your cakes are dry I would possibly buy an internal thermometer for your oven. I wonder if it is not running at the correct temp. I could not understand why you used 5 diff. recipes and they all came out dry???
I am thinking your oven is way too hot.
Try that and see what happens.
Also, the white almond sour cream cake recipe that you can use but make the basic cake or you can use the box. This is a very moist recipe. Almost gooey.

I agree! Your cakes are either being baked too long or your oven temp. is way off. I have baked from scratch for years and have never had this issue.

When I do box cake mix, they turn out fine. But when I do from scratch it gets dry. maybe instead of 350 I should put it on 325? The first couple of times I thought I messed up...but after it kept happening i figured it wasnt me lol

Be willing to check them sooner. I have checked the temp of my oven with an oven thermometer and it is not running hot. However, for most recipes if I bake even to the minimum time listed by the recipe it will already be close to being overdone.
It is not just overbaking. Post the recipes. I have found that process and leavening can contribute to that cornbread taste and texture.
