Hi all..

after reading this forum and this site I have become a die-hard WASC cake fan. infact I use my fave cake mixes with this recipe to make probably my 5 most popular flavors. But now I need a RV. I know DH makes a red velvet box mix but good ol' Canada doesnt sell it icon_sad.gif so I guess that means I am going "back-to-scratch" icon_smile.gif

Can people point me to their fave STURDY, carvable RV recipe?

So its been months and no one has responded... that leads me to believe that a sturdy firm RV cake is a mythical creature which doesnt exist. One last attempt... any one out there?

I got this from one of my books on cakes...pretty sure it was from Confetti cakes but don't remember.
I have used this is few times and it is a carving cake

3 1/2 cups (14 ounces) cake flour
1/2 cup ( 1 1/2 ounces) unsweetened cocoa
1 1/2 tsp salt
2 cups ( 16 ounces) canola oil
2 1/4 plus 1 tblsp ( 16 ounces) sugar
3 eggs
1/3 cup ( 3 ounces ) red food colouring
1 1/2 tsp pure vanilla extract
1 1/4 cup ( 10 ounces ) buttermilk
2 tsp baking soda
2 1/2 tsp white vinegar

oven at 350
sift flour, sugar cocoa and salt together
On medium ...mix oil , sugar and until combined. Put mixer on slow and add eggs one at a time
Add food colouring and vanilla on slow
Add flour and buttermilk separately in 5 increments starting and ending with flour
in small bowl mix together vinegar and baking soda. Immediately add to batter and beat on medium for 10 secs

I watch my cakes so I never write down or know exact cooking times...sorry . I wrote this out quickly because I am leaving for work now so hopefully I wrote it without too many typos

ADid this turn out okay? Aparently red velvets are monsters when it comes to wedding cakes I have to do a 6 tier cake. She wants a couple tiers red velvet. Im thinking of telling her I wont go any farther down than the 3rd tier from the top?
