I am looking for a good chocolate cake recipe from scratch that is sturdy and dense enough for it to be covered in fondant and stacked with other cakes. My current recipe is delicious but too light and fluffy causing the cake to collapse after I cover it in fondant.

I have never had a cake collapse under the weight of fondant. I don't get this. Over the weekend, I covered my lemon cake with fondant. It is a light airy cake and it did not collapse. It makes me wonder if it is the fondant and not your cake recipe.
How thick are you rolling your fondant. Never had one to collapse either. Indydebi, uses only box mixes, no enhancers, and she covers cakes with fondant , with no problem. So, again, you might be rolling fondant too thick. hth
Could it be your support structure rather than the recipe you use? Do you use straws, dowels, SPS?
