Help! Does This Need To Be Refrigerated???

i am making my cousin's 2nd bday cake as a ggift (and what a gift, because they are having 65+ people at his party!) LOL
--note to self, ask about # guests FIRST before offering---

anyway, they want a vanilla cake (which has been baked) with either vanilla pudding & banana slices or the banana filling(from the sleeve) with banana slices. I have both here at my house.

cake is going to be stacked and covered in fondant. or at least, thats the plan. but will it need to be refrigerated? I am storing it until the party, my house is kept at 72. it is ridiculously hot & humid here right now (about 100 degrees yesterday) but the cake would only need to be outside to get to the car, and then out of the car to the party location (which is 10 min up the street).

I want to crumb coat this morning, cover in fondant this afternoon, and decorate tonight since it is going to be 3 tiers and i have to take into consideration the one year old at my hip all day until bed at 6pm. Im still not that quick at icing/covering cakes so i need the evening to decorate.

whaat are your thoughts???? i am transporting it stacked, which i always do, BUT that creates a little prob if it needs to be refrigerated more so due to the weight (my shelves are removeable)

It is my understanding that the sleeved filling does not need to be refrigerated so that is what I would use versus the vanilla pudding. I used a sleeved cream cheese filling in a wedding cake for that reason and it was fine.

You don't want to refrigerate a fondant covered cake...it could mess up your fondant.

The filling with vanilla pudding definitely has to be refrigerated.

I would go with the sleeved filling myself. As for refrigerating fondant covered cakes, there are mixed views on this. Some people have disasters while others have great success. Have you ever put your fondant covered cakes in the fridge?

The banana slices is what is likely to give you problems because the banana filling part can be made in ways that are shelf stable. Banana can get really slimy once sliced even when in something in the refrigerator not to even mention the "turning" dark problem would need to be overcome.

That aside, I know that that on Cake Boss, Buddy did put banana in a cake he did on a episode. It was the one where he put bananas, fruit filling whipped cream and some other things as the cake filling. I think the cake was called Brown Derby. Anyway, the episode showed them just putting the banana right in and I don't think they put anything on them.

oh geezz... please pray the bananas are ok! i put a thin layer of BC, then a thin layer of the banana creme from teh sleeve, and then a layer of banana slices...

lets prayyyy please...lol

Refrigerating fondant is no problem. When it starts coming to room temp it will get that shiny condensation look. Unless there is heavy decor on it, it will be fine. It will dry. Just don't touch it until it does. One way to protect it in the fridge is to put it in a box and then wrap that box tightly with saran wrap or a garbage bag. When you take the cake out of the fridge, leave it wrapped in the box until it comes to room temp. It's supposed to help with the condensation issue.
