Just wondering if any of you layer your sheet cakes? I noticed on Cake Boss that they put several thin layers for their sheet cakes. The ones I saw on Monday night's show were very large sheets with several thin layers. The cakes looked to be around the usual 2" in height.
I think he makes several thin layers as this allows him to have a filling between each layer.
Yes I layer my sheet cakes. I do so because sometimes more servings are needed. It's really a standard for me either one layer or two. I don't tort the layers I just bake two separate layers. To transfer the second layer into place I usually spread a thin layer of cornstarch on a cake board, turn the cake top side down and the cornstarch helps the cake to easily slide onto the bottom layer.
I don't know how they,on TV, move those big layers around so easily and none seem to break.

I do the same thing. My sheet cakes are 4" tall. People like that they can have a filling in a sheet cake.
I split & fill all of my sheetcakes--so, a 4 inch tall cake w/ 3 layers of filling.
I think it distinguishes my sheetcakes from those at the grocery store and helps justify the fact that they're 3X the cost

Nobody, and I mean NOBODY, in my area likes filling at all....it's the craziest thing. I moved from CO, where they couldn't get enough filling in their cakes- to WY, where, I guess you could call them cake purists. My sheet cakes are 2" tall and if there were filling- it'd just be a single split with one layer of it for a sheet. I consider a 4" tall rectangular cake a kitchen cake or a 2 layer rectangle....I think that's the point of calling a sheet cake a sheet cake- they are flat as a sheet!
