When To Place Fondant Flowers, Cupcakes Must Be Chilled

Hello everyone, I need a bit of advice. I am doing a wedding in a couple of weeks. The bride is dead set of IMB for the cupcakes. It is hot and humid here in SC around this time and the reception is outside. So, I need to frost and then chill these cupcakes the night before, in order for them to be put outside on the cake table and not be a melty mess. I said all that to say this...I am putting fondant flowers on the cupcakes, so when should I put the on. I know fondant can't go into the fridge....so perhaps when I am setting them up, but then the IMB will be cold and hard..not sure what to do? Plus I am the maid of honor sooo...my time is pretty tight. Any advice? Thanks in advance

I don't know about IMBC in heat. Chances are that regardless of what you do they will be a melty mess. I'm sure you explained this to the bride. The other concern I would have would be putting fondant decorations on top. Once the icing starts to melt, it will be wet, and your fondant will also become wet and begin to run as well. She won't change her mind and let you use either Indydebs or Sugar shacks buttercream? It would be ashame that all of your hard work would look awful in the end. Will the cupcakes be set outside the entire time or just before serving? That will make a difference too. Hopefully someone else has some suggestions. Good Luck

Wanted to add this also. Can you get Bettercreme where you live? It holds up in heat, and takes flavoring really well. It tastes good too. You can also add pudding mix to give it a richer flavor. There is a thread in the recipes forum with tons of info on Bettercreme. It is a non dairy product, so it does not need refrigeration. I've used it lots of times for outside parties, and you can put fondant decorations on top.

Thanks for the reply. The cupcakes will be under the pavilion for about 3 hours before being eaten. I am going to get her to taste the Sugarshack type icing and see what she thinks. Bettercreme is another way to go. I wish is was readily available where I lived. I am doing a trial today with the chilled IMB and then putting decorations on after being chilled under my home patio..to simulate the actual event as we have similar weather today as the day of the wedding. I'll let you know how it turns out. Thanks for all the advice wish me luck!

So, the IMB did hold up well in the heat and humidity, 4 plus hours. The bride did not like the Sugarshack buttercream....So, IMB it is. I am just working now on all the little flowers for the cupcakes. Thanks again for you suggestions...have a blessed day.
