Can cakes with edible images be refrigerated?

I was asked to do a groom's cake of cheesecake with an edible image sports logo on top. I was going to put a thin layer of Rich's Bettercreme underneath the image. I thought that would work out fine until it occured to me that since cheesecakes have to be refrigerated, the image might be ruined when the cheesecake is taken out of the fridge at the reception and condensation forms on the cake. Now I'm not sure what to do. I have heard so many different opinions on this. Some people say they do ice cream cakes with images and have not had problems. Others say to never refrigerate cakes with images because the condensation will cause them to run.

Personally, I refrigerate all cakes including those with edible images and I have never had a problem.

Since you've heard you can and you can't, you need to do a test run yourself and rely on your experience.

If you're using an edible image that is pre-printed--like the licensed images at the grocery store--you're golden. But if you've printed the image on your own (water-based inks are used in print-on-demand systems), you may experience some running. Why not pre-ice your cheesecake, and apply the image when you're ready to serve? You can lightly spray water on the icing if it's crusted, and then easily and quickly place the image on the spot.

The running comes down to humdity. Is it humid where you are? Make sure that you smooth the image down well so no air bubbles appear and you should be fine. We have large ice cream chains who use our products and have no problems at all.

I have used an edible image on a sheet cake before with just regular buttercream and put it in the fridge over night and the image turned more of a blue tinted color. The image was printed by Walmart too. Luckily I had several printed for back ups. But, that's just my luck, maybe yours will be better lol. Oh and it was very humid too might I add.

All the cakes I've done with edible images have been refridgerated at least overnight. I used buttercream on those cakes and they all came out perfectly fine.
