Coloring Chocolate Gold

I am working on come cake pops for a client and they need to be a nice n shiny gold. I tried to use some luster dust on them.. but they give a streaky finish. Has anyone ever used the PME or Chefmaster luster sprays on chocolate before? Do they give a nice smooth finish? TIA

Did you try applying the dust dry? No streaks that way.

You can also mix your dust with melted cocoa butter and paint it on, but even that will be more streaky than dry dusting.

Your chocolate has to be room temp with no condensation for the dry dusting to work properly.

yeah. i did try the dry dust... but a lot of the white chocolate is showing through. i want a nice solid gold look.

In the future, consider tinting your white chocolate a light yellow so it's not so obvious under the gold.

Did you really load up your brush with the dust? Sometimes it takes a lot to get good coverage. The more you 'brush', the more streaks you're going to have. You might want to try 'pouncing' the brush on the cake pops instead of brushing, then tap off the excess.

What about that metallic gold spray that Duff sells now - I got some from Michael's. That may work for you?

Use chocolate, not white chocolate, with the super gold or old gold luster dust. Gives a much better finish than the white chocolate or even yellow candy melts.

To get a really gold finish, I buy the colored cocoa butter from Chef Rubber. They look the most metalic of anything I've seen.
