Strawberry Cake With Fondant?

Hello everyone!

I am very new with cake making and I'd like to make a strawberry cake covered with fondant for my daughter's birthday in july. I have this great image in my head, but no idea which recipe I should choose to make sure the cake will hold up! If anyone has a matching icing recipe, it would also be of great help. What I'd like to do is pretty simple: I'd make a round cake with a smaller one over it, covered with hot pink marshmallow fondant and green fondant decorations. No carving for me yet!

I always prefer vegan recipes, but I'm open to everything else too!

There are tons of vegan recipes for strawberry frosting on the net. You can make the base out of Earth Balance margarine, coconut oil, or Spectrum shortening. They use vanilla, frozen strawberries or jam, and organic powdered sugar. Just make four layers by cutting each layer in half. Put most of your frosting between the layers, and frost the outside with a thinner layer. I am trying a new strawberry frosting recipe in a few hours. I will report my findings.
