I think that I may have bitten off more than I can chew this month. So far, I've been able to cope with the excessive orders, but i'm starting to feel a bit overwhelmed. So far this month I've had four dozen cookies, a teapot cake and a full detailed fondant covered sheet cake to do. For the next two weeks I have twelve dozen college mascot cookies, two graduation cakes, a baby shower cake, First Birthday cookies, and three Birthday cakes. One of which is to serve 150 guests for an extremely important group of people. I work a full time job, I'm in culinary school three days a week and have three kids and a husband. I'm taking three days off from work and have asked a friend to assist on one night which helps calm me down some. How does one do this and not go completely bonkers? Any suggestions? Wondering how soon I can cover these cookies with fondant without them going stale on me....KU Jayhawks take an enormous amount of time.
Try not to take on more than you can reasonably handle. Overwhelming yourself will eventually effect the quality of your work! Good luck getting through your orders...we'll be cheering for you!

Can you recruit the kids, your husband or any classmates to help with anything from rolling and cutting cookies to doing dishes and such?
Thx for the encouragement. I can have the kids help with dishes. That's a good idea. I have 2 year old who can't do a whole lot, but he's excellent at eating the cake trimmings! I can put the 6 and 13 year old to work though. Thanks again.

I feel your pain! I too have a full plate! One full time nursing job, one part time, 5 kids 21-11 y/o and cake!! I pay the girls to help doing everything from cleanup to fondant. I have had to take off from my part time job to bake, and even though I make far less with cakes, it's worth it to do something I totally enjoy! Good luck, and be happy to be doing something you love!
