buttercream frosting to last hours outside without melting.!

Hello! I'm trying to find a buttercream recipe that will hold at an outside wedding without melting. Any ideas?

A very popular buttercream recipe is IndyDebi's Buttercream (you can find it in the recipe section). I've never used it for an outdoor wedding, but many others have with great results.

Hi - this one is a tried and tested shortening-based recipe that many CC-ers use with success. It is a crusting buttercream that holds up great in heat and humidity:

I used IndyDebi's Buttercream recipe for a 3 tier birthday cake and it held up amazingly! I live in AZ so you can't leave ANYTHING outside for very long before the sun destroys it but this "buttercream" held its own lol. I'm not a huge fan of using shortening in my buttercream so I was hesitant about this recipe but it has a great taste and texture (doesn't leave that oily film in your mouth that some Crisco recipes do) and is easy to work with!

Have you thought about using fondant? It holds up great outside in heat and humidity. I have an outside wedding at the end of the month where the cake will stand 5 hours before cutting. It will be under a tent but I'd still be hesitant to use BC. I've always had good luck with fondant though!

I second the Indydebi Buttercream recipe! Durable and, thanks to the powdered cool whip, a little different than standard crisco buttercream, and quite tasty!

Whatever you do, make sure that baby crusts! I don't do buttercream outdoor weddings- not because of melting, but because my buttercreams don't crust. All manner of thingies can get stuck on sticky icing when its outside! Yuck!

Another all shortening based recipe that you might try is Sugarshack's bc. This is my favorite all shortening recipe. Should behave like IndyDebbie's bc, since it is shoterning based.

I never thought of that...thanks for the heads-up. which icing do you use?

For over 20 years I used b'cream for 100s of outdoor wedding and other cakes and cannot think of a single time the icing melted. This was in hot central CA. Granted, it was dry - almost never humid but temps could go into the 100s and rather than melt, it would dry out.
IndyDebi's sounds like a good choice.

So what was your recipe?
And you may be on to something. It may not be the heat, but humidity that is the culprit.

I use Indys recipe and I stand by it and LOVE THE TASTE, infact after I started to use her's I started to get request for that recipe!!! Everyone raved about it.

I live in the Houston Texas area and we get so hot and humid, you can shower and be outside and in 2mins your drenched in sweat. I hate it!

But Indys recipe crust real good, so good that I thought it was too hard! but when ppl cut into the cake, it was moist and soft!

I love indys recipe too, BUT mine is always a grainy texture so I stopped using it, id love tips on how to fix this? maybe it cant be and its the dream whip texture..?
