I had a request for a 4 tier wedding cake for 50 people and 3 sheet cakes. I told her it would look like a Barbie cake. What are these cheap people thinking. They are having 200 quest.

If you take the order and if you use dummy cakes for some of the tiers, be sure that you charge her adequately for decorating the tiers. For me, the price for decorating a dummy is the same price as a real cake.

I don't understand these people who have big weddings and don't want to buy a proper cake. If they can't afford it, why don't they invite fewer people?

They didn't want dummy cakes they wanted it all real cake-4tier-serving 50 guests. Baby size.

The smallest 4 tier I would make is 10-8-6-4. I don't even like the way this looks because it kind of goes straight up, but I do not have pans to do any smaller, nor do I have the patience. It takes me longer to decorate a 4" cake than an 8". I know that is more than 50 servings, but that is where I would draw the line. Good luck.

That will be one tiny cake, It will look like its for a child. Some people are so cheap it makes us look bad. I once catered a wedding where the bride had a cash bar contracted through the hall and didn't want to pay me as the caterer to serve water, tea & coffee, even though I waned them that by eliminating that service would mean I wouldn't even bring glassware, so there would be absolutely no beverages coming from the kitchen. Nope they didn't want to pay the $1 per guest- so the guests had to pay for water at the bar and had no coffee whatsoever. The guests were mad at my waitstaff, NOT the bride & groom. I try to pass on some of the more ridiculously cheap-o requests now, because it just makes me look like an unprofessional idiot.

I don't see what the problem is... 3 sheet cakes feed 300, plus the Barbie cake that serves 50 = 350 servings for 200 guests. They're cheap people for serving more than what's needed?

I took this to mean 3 1/2 sheets which would feed 150 and then the small tier cake.

The look isn't for everyone, but I do 1" difference combos all the time. They are tall and narrow, and give quite a nice look when on a beautiful white stand. Personally I prefer smaller at the top, because quite frankly, even a 6" round starts to look too big to me. So, a 5-6-7-8 would serve 53. It wouldn't look small, it would look tall and elegant. Here's one. The top 4 tiers are the configuration I just mentioned.

If they want a 4 tier cake and 3 sheet cakes, isn't that good for you? charge for how many servings it will produce, 300 plus. IMO

Thanks! It's my favorite ever. I try to push designs like this to break people out of that "I want a 3 tier cake with dots and ribbon"...uh, no. Not from me.

HEY! Have you hacked into my order for this week??? That's what I'm doing.... actually, it is 4 tier, and 2 tiers have dots, one has ribbon and the other (top) is plain....

C'mon people, think outside the cake box! I am so done with dots...I think when people ask about them I am just going to say, "OMG, seriously?icon_confused.gif That is SOOO 5 years ago..." What do you think?

Or I could go back to the other high school vernacular we used to use and say, that it's played-out... thumbs_up.gif

I have offered free custom design and no up-charge for detail work if someone wants dots and ribbon. It has worked a few times, and I got more orders for it where I charges full price.

Anna, I won't do them anymore, period. Fortunately, I'm in a position where I can set rules like that, and not worry about losing business. Cause quite frankly, for me, doing cakes like that sucks the life out of me and makes it not fun. But that's me, I decided if I want to do this, it's my way and it's going to remain fun and interesting.

When I get a request for an overdone design, I ask the person what in particular they like about it. What parts would you like to see incoporated into a new design, something unique just for you? After some general questions I find that most times, either the bride just picked something off the internet that had their colors, or they're trying to save money. So, they're open to ideas.

And I quite plainly let them know that if they have their heart set on that exact cake, I would be happy to refer them to someone who would do it for them.

I'm going to guess they are order the sheet cakes because they think it is the 'cheaper option".

Do you do kitchen cakes (two layers like the wedding cake) or single layer sheet cakes?

I feel you on the life-sucking part...same here. Sheet cakes do that to me too. Once I am all the rage around these parts, I will refuse them too.
