How far in advance, cookie cake

I am making a cake for Saturday that is part cookie cake and part regular cake. The cookie part will be the base, with a cake skateboard ramp on it. How far in advance can I bake the cookie part? I'd like to bake it on Friday but don't have anything other than tinfoil to cover it with.

If you only have foil, I would put a piece of bread in there and then double wrap it with the foil. The bread will help keep it soft & fresh.
