Does anyone have any suggestions or recipes on how I could make something that is tast like a pineapple upside down cake....Cake and/or filling suggestions??? I have a friend who wants there grooms cake to taste like a pineapple upside down cake...

If doctoring a mix: use pineapple juice in your mix and add crushed pineapple.

If from scratch - I have no clue - something like a humming bird cake but using pineapple only?

scratch cake or box mix?? scratch cake; instead of using regular sugar substitute brown sugar...also instead of oil use butter...add crushed pineapple to cake...if boxed...use pineapple in mix and use juice in lieu of water...could also make a brown sugar frosting to accompany the box mix..hth...

What is the shape? I only have scratch recipes, but my cake could easily be converted to a layer cake. I use an iron frying pan for mine, but Bobby Flay just aired a Throwdown and his competitor used a regular round cake pan.

Just remember that pineapple upside down cake has a brown sugar top that starts out at the bottom--hence the 'upside down' aspect! ;D. It really does add a major taste component. Why not make a couple of real PUDC's and have the brown sugar crust be the 'filling'? In other words have the bottom cake layer flipped upside down so the brown sugar is at the top like it's supposed to and then have the 2nd cake as the top layer with the brown sugar part down so when they're together it looks like filling. Then frost with a pineapple buttercream. just a thought. But it sounds pretty good. I may have to try that sometime!
