I've decided to make a good friend's wedding cake. She wants a 3 tiered off centred square cake. I bought a set of square pans, 2" high. Are these ok? I figured I'd bake 2 layers per tier. Should I use the 3"? What's the big difference??
Thanks!

It's okay to use the 2" deep pans that you bought... 4" tall layers are typical depending on the look you're going for. Find out how many servings the goal is because the set of pans you bought might not be big enough for 3-tier offset stacked. Here are the right angle measurements so you can figure out what size square will fit diagonally upon another...
4" 5.66
5" 7.07
6" 8.49
7" 9.9
8" 11.31
9" 12.73
10" 14.14
11" 15.56
12" 16.97
13" 18.38
14" 19.8
15" 21.21
16" 22.63
17" 24.04
18" 25.46

You could also use sheet pans and cut your sizes.
