Wedding Cake Help! Eyes Are Spinning.

I have my first real wedding cake due this weekend.

If I dont have the freezer space for the cake but have room in my fridge, would I be okay to bake the cakes tonight and wrap them really well for decorating Thursday/Friday night? Wedding is on Saturday.

Also, it is a stacked 4 tier square cake. If I wooden dowel each of the 3 bottom tiers as I am stacking them, would you suggest I put on long down the center of the bottom 3 layers before I place the top layer on?

My plan was to stack the 14in and 12 in bottom layers and transport then finish stacking at the location. Does that sound about right or should I wait to stack the entire cake when I get there?

I am having middle of the night anxiety attacks and the wedding is still 5 days away!!!

I would suggest baking now what you can fit in the freezer to get some of the baking out of the way. If you don't have room in your freezer I would wait to bake the cakes until Wednesday.

I stack what I can lift at home and assembly the rest on site. I put 2 dowels offset from the center through the entire cake. No matter what, it never moves.

Some people swear by SPS (single plate separator - can be purchased from global sugar art). I have used it, it is okay, but I use bubble tea straws on all my cakes with sharpened wood dowels through the entire thing. SPS is probably not an option since the wedding cake is so close and it is not something most stores carry (wilton plates are NOT the same).

There is no way I would be able to lift 3 tiers! icon_eek.gif I would usually only stack two tiers, then assemble the rest of the cake on site.

That is how I used to do it. Set-Up took longer that way, but I had to do deliveries on my own without help from hubby, so I had to be able to lift and carry everything myself.

and relax and breathe! icon_wink.gif Just try to have everything ready as much in advance as possible: have dowels, cake boards, baking supplies, etc gathered and ready so you know you have everything at hand. Nothing worse than realizing at 9pm Friday nite that you are missing a cake plate! icon_confused.gif

Make yourself a check list of what needs to go with you on delivery/in your fix-it kit. Lists always helped me relieve the stress of trying to remember everything.
