Does anyone have a good tried and tested custard frosting recipe? I really want use it on some sticky toffee cupcakes but want to be sure that it turns out well... and you're all the most knowledgable cake people that I know.
US here, so I need a little more info. What kind of custard? I have recipes for sticky toffee pudding and custard frostings. Let me know the flavor you are looking for and I will try to help.
Something like this? http://www.marthastewartweddings.com/recipe/custard-buttercream
I've made this recipe 3 or 4 times. It's to die for but really labor intensive so I don't make it very often.
I bet you could make a fake one...I've made fake custard filling using a recipe with vanilla pudding and honey and almond which give it that "custardy" flavor.
On the back of the Dream Whip box there is a recipe for a "frosting" which consists of pudding mix and dream whip...i bet you could make that and add honey and almond flavor and make a custard flavored whipped icing that would be totally delicious.
Custard:
1 1/2 c milk
1/2 vanilla bean
4 lg egg yolks
1/3 c granulated sugar
3 tbsp cornstarch
2 tsp rum, bourbon, optional
1/2 tsp vanilla bean paste
Combine the milk and bean and bring to a simmer. Whisk yolks, sugar and cornstarch in a bowl. Slowly whisk in some of the milk to temper. Return mixture to pot and bring to a boil, whisking constantly until thickened. Put in a bowl and add liquor and vanilla bean paste. Cover with cellophane touching top. Refrigerate.
I am curious as to how you ar making these cupcakes. My rcipe is a cupcake with no liner, sticky sauce poured on top. Your idea sounds interesting. Please share your idea. Thanks.
I'm going to use the toffee sauce as a filling instead of pouring it over the top and then maybe put a dribble over the custard frosting - just experimenting but I'll put pics up and let you all know how it goes. Thank you for all your input
THanks, Chala86. If you use my recipe, a little more cornstarch will give you a stiffer custard.
Ok - so I never got round to taking pics of the cuppies but they went down famously. The frosting was a little thin but I just kept adding icing sugar until it was the right consistency. Definately will be remaking these sometime
